Tater Tot Casserole

Yesterday I asked for recipe ideas from all of you and mentioned making Tater Tot Casserole. It's yummy and easy and I'm sharing, just in case you would like some new dinner ideas, too. I've got several recipes to share and will start doing it once a week, probably on the weekend. Since I've had readers that sounded interested in this recipe, I figured I'd post it.

This is not a picture of my tater tot casserole. I grabbed it off the Internet since I didn't think to take a picture of mine, but mine looked like this, only in a 9x9 pan.

Tater Tot Casserole

Ingredients:


1 lb ground beef
1/2 onion
1 can cream of mushroom soup
salt
pepper
1 bag tater tots
shredded cheddar cheese

Directions:

Brown ground beef and chopped onion in skillet. Drain the grease. Stir in the cream of mushroom soup and add salt and pepper to taste. Put in 9x9 baking dish. Top with tater tots (It took 3/4 of a bag) and then cheddar cheese. Bake in 350 degree oven until tater tots are done and cheese has melted.

The one thing I like about this recipe is how diverse it can be. I went to www.allrecipes.com and got several variations. People put a can of green beans, or corn, or mixed vegetables in it to add flavor or sneak some veggies in for picky eaters. I had made some lima beans earlier in the week and my guys are leftover snobs and will not eat leftovers. I put the lima beans into the casserole to use them up, and not have to finish eating them by myself. So, you can make it like it is above, or add your own flair to it. And it's still really good. Notice that I didn't put a measurement next to the shredded cheese. I put quite a bit on ours (I would guesstimate a cup to a cup and a half). Of course, I've never heard a person complain that a dish was ruined because it had too much cheese. You? Put however much you want.

Kyle ate two helpings at dinner, then went back an hour later and got another helping. So, definitely kid approved :)

Love this dish!! I can only make it when my hubby's not home though! He's one of those WIERD people that doesn't want his food to run together. Lol

Made this version of it tonight and LOVED it! Was a hit with the kids also. I did change one thing by baking the tater tots before to make them crispy and then putting it in the oven to melt the cheese and heat the meat back up! YUM!
